Chicken Parmesan


Chicken Parmesan from Olive Garden is one of my absolute favorites...along with
the salad and bread sticks!  Unfortunately, Chicken Parm from Olive Garden and their bread sticks are not conducive to the THM lifestyle.  I have been making this little gem for years.  It is delicious and I found out this past week that it goes terrifically on top of a salad!  (It is also very, very easy-stupid easy as I usually say)

1 bag chicken tenders (I buy mine from Aldi)
1 can sugar free Hunts spaghetti sauce
1/2 cup parm cheese (I used a combination of parm and romano from the can)
1 cup shredded cheese--any combination you want is fine (I used co-jack on this batch--although pepper jack gives it a wonderful zip!)
salt, pepper, garlic powder and onion powder to taste

Heat oven to 350ΒΊ.  Lay thawed chicken tenders in a 9x13 pan.  Sprinkle with salt, pepper, garlic and onion powders to taste.  Pour the spaghetti sauce over the tenders.  Sprinkle with cheeses.  Bake in pre-heated oven for 30 minutes or until done.  I use smell and site to tell me when it is done.

The whole family loves this dish, even the haters who don't like OG Chicken Parm.  The humanity!

I usually serve this with steamed broccoli and a salad.  For those who aren't trying to lose weight and those who absolutely love bread, I serve with some toasted whole grain bread.

While at work last week I was rather embarrassed when a sub contractor came in and I had my desk spread with my dinner.  A plate of chicken parm and broccoli, a salad, a napkin and my GGMS.  He kept looking at me like I was crazy.  So after he left I cut up my chicken and poured everything onto my salad and mixed it up.  Oh. My. Lanta.  GAME CHANGER!  The mix of the sauce with the "ranch" dressing was ah-mazing!  Will definitely do that with the other bowl of leftover chicken I have!

chicken parmesan, steamed broccoli, salad with Blendtons (pg 476 THMCB), salad sprinkles (pg 493 THMCB) and FP ranch dressing (pg 527 THT).
